Mooli’s can be ‘Indian Pret’

Street food-inspired concept Mooli’s could become Indian food’s answer to Pret a Manger, claims owner Iqbal Wahhab in Big Hospitality.
Wahhab, who acquired the business in a pre-pack administration deal earlier this year, wants to roll out the concept beyond its Frith Street base. “The whole point of buying it was to grow it rather than let it remain solely in Soho. It has real scaleability and I can see it being well received in other areas in London and outside.” The ambition was to become an ‘Indian Pret a Manger,” he said.
Wahhab now wants to create a central kitchen and is looking for more sites in London. He has also pledged to continue with apprenticeships and recruit former prisoners to staff his operations. “It is important to invest in people. We started apprenticeships early on at Roast [Wahhab’s restaurant] and have seen many stay with us.”
